A Junior Olympic Swim Meet became the unlikely site to discover the best rib recipe ever! It's proof positive that you can find dedicated grillers in every sport!
Someone once wisely said, "If I only had one day to live, I'd choose to spend it at a swim meet because they go on forever." I just spent my last two weekends---6 days total---at my daughter Ali's swim meets and I can vouch for the reality of that statement. Most days she was in the water for warm-ups by 7:30 a.m. and finals usually lasted until 7 or 8 p.m.. Long, sticky-hot days aside, it was so great to watch my 17-year-old swim her last long-course meet as a high schooler. Her next year of events will all be swum in yards---like football! Unlike football, swimming has a lot of downtime---for the swimmers as well as the spectators. After burning out on reading, eating and sleeping between events, I got into some grilling discussions with some of the other parents. One in particular, Gloria Squartino, shared an amazing rib recipe that I went home and tried. It was so good that we made it twice in one week, adding a few more herbs and signature ingredients the second time. I'm expecting to feature it on one of my first fall Gridirongriller shows. You are going to love the simplicity of preparation and the savory sauce. As far as sports go, it might not seem as though swimming and football have a lot in common, but much to my daughter's delight, we found out last week that I was named along side Olympic Gold Medal Swimmer, Dara Torres to the Broward County Sports Hall of Fame as a 2009 inductee. That is one award ceremony my daughter is already begging to attend!
